Preheat the oven to 325 ° F.
In a bowl, combine maple syrup, peanut butter, and cinnamon.
Stir in the oatmeal, quinoa, coconut flakes, pumpkin seeds and flax seeds.
Spread the mixture on a baking sheet. Press it down a little with your spatula.
Bake for 16 to 20 minutes, until the granola is golden brown.
Remove from the oven and let cool on a rack.
Once cool, break the granola in pieces.
Store the rest of the granola at room temperature in an air-tight container.
Keeps for about two weeks.
