Seitan

Yea, it sounds kind of devilish, but this stuff is a truly heavenly source of protein.

What exactly is it?
Seitan is wheat gluten aka the protein in wheat and is atop this list because it’s the closest texture and look-wise to meat.

Like tofu, there isn’t much taste so it’s a delightful blank canvas for bold flavors.
Avoid this if you’re sensitive to gluten!
