Potato Pumpkin Garlic soup

Ingredients
  

  • 1 medium potato peeled and cut into pieces
  • ½ large pumpkin peeled and cut into pieces
  • 2 cloves garlic peeled
  • 4 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black ground pepper
  • 1 tsp ground cloves
  • 1 tsp ground dried ginger
  • 800 ml water
  • To serve: flax seeds, hemp seeds, coconut milk

Instructions
 

  • Heat a large pot over medium heat and pour in olive oil.
  • Add in garlic, potato and pumpkin. Season with spices, salt and pepper.
  • Cook for 3-5 minutes, until slightly golden.
  • Pour in water and bring to a boil.
  • Boil the vegetables for 15 minutes until soft.
  • Turn the heat off. Set aside half of the boiled water and blend the vegetables with the remaining liquid. If needed, add in more water and blend again.
  • Serve with coconut milk, flax seeds and hemp seeds
